Home made vegetarian take away noodles

Buy good quality tofu (not the cheapest asian crap)

Fry tofu cut into cubes in oil/wok

Soak rice noodles in hot water for 15 mins

Chop and add onions, spring onions, capsicum, pepper, carrots, bean shoots, bok choy. One of those nifty shredding/slicer/dicer things that they used to saell at the markets and on lat night tv is really handy for getting your vegetables thin and long.

Add tons of White pepper to the stir fry.

Drain the water from the noodles and throw them in.

Douse the lot in soy sauce (cheap) or Tamari (better but costs more) until the noodles are no longer white.

Stir it together and serve into noodle box!
